- 4 (6 oz) salmon fillets
- Salt and pepper, to taste
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tsp lemon zest
- Juice of 1/2 lemon
Instructions
- Season salmon fillets with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear salmon fillets skin-side down for 4-5 minutes, then flip and cook 2 more minutes. Remove and set aside.
- Lower heat to medium. Add butter to skillet. Once melted, add garlic and cook for 1 minute until fragrant.
- Stir in Parmesan, parsley, lemon zest, and lemon juice. Cook until cheese is melted and sauce is bubbling.
- Return salmon to skillet and spoon sauce over the fillets. Cook 1-2 minutes more until salmon is cooked through and cheese forms a light crust.
- Serve hot, garnished with additional parsley and lemon wedges if desired.
Notes
- For a crispier top, broil salmon for 1-2 minutes after saucing.
- Use Pecorino Romano instead of Parmesan for a bolder flavor.
- Great with steamed vegetables, rice, or a fresh green salad.
