For the Chicken Meatballs:
- 1 lb (450g) ground chicken
- 1/2 cup almond flour (or breadcrumbs)
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
- 1 tbsp olive oil (for cooking)
For the Garlic Butter Sauce:
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 tsp red pepper flakes (optional, for heat)
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
For the Cauliflower Rice:
- 4 cups cauliflower rice (fresh or frozen)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
Step 1: Make the Meatballs
- In a large bowl, mix ground chicken, almond flour, egg, garlic, salt, black pepper, onion powder, paprika, oregano, Parmesan, and parsley until well combined.
- Shape into 1-inch meatballs (about 16-18 meatballs).
Step 2: Cook the Meatballs
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the meatballs and cook for 8-10 minutes, turning occasionally until browned and cooked through. Remove and set aside.
Step 3: Make the Garlic Butter Sauce
- In the same skillet, melt butter and sauté garlic for 30 seconds, until fragrant.
- Pour in chicken broth, red pepper flakes, and lemon juice. Simmer for 2-3 minutes.
- Return the meatballs to the skillet, tossing them in the sauce for 2 minutes.
Step 4: Prepare the Cauliflower Rice
- Heat 1 tbsp olive oil in a separate pan over medium heat.
- Add cauliflower rice, salt, and pepper. Sauté for 3-4 minutes until tender.
Step 5: Serve & Enjoy
- Serve meatballs over cauliflower rice, spooning extra garlic butter sauce on top.
- Garnish with fresh parsley and extra Parmesan.
