Ingredients
-
1 cup orzo pasta
-
1 tablespoon olive oil
-
2 tablespoons unsalted butter
-
3 cloves garlic, minced
-
1 bunch asparagus, trimmed and cut into 1-inch pieces
-
1/4 teaspoon salt
-
1/4 teaspoon black pepper
-
1/4 teaspoon red pepper flakes (optional)
-
Zest of 1 lemon
-
Juice of 1/2 lemon
-
1/4 cup grated Parmesan cheese
-
2 tablespoons chopped fresh parsley (optional)
Instructions
-
Cook the orzo: Bring a pot of salted water to a boil. Add orzo and cook until al dente, according to package instructions (usually 8–10 minutes). Drain and set aside.
-
Sauté the asparagus: While the orzo cooks, heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the asparagus, salt, and pepper. Cook for 4–5 minutes, or until tender-crisp. Add garlic and cook for 1 more minute, until fragrant.
-
Combine everything: Add the cooked orzo to the skillet with the asparagus. Stir in the remaining tablespoon of butter, lemon zest, and lemon juice. Mix until the butter is melted and everything is coated.
-
Finish with cheese: Stir in grated Parmesan and taste. Adjust seasoning if needed.
-
Serve: Top with fresh parsley and an extra sprinkle of Parmesan, if desired. Serve warm.
