  • 1/4 tsp salt (or to taste)
  • 12 tbsp olive oil (optional, for a richer texture)



Instructions

  1. Prepare the Ingredients:
    • Peel and finely mince or grate the garlic clove into a paste using a garlic press, fine grater, or knife.
  2. Mix the Aioli:
    • In a small bowl, whisk together the mayonnaise, garlic, lemon juice, Dijon mustard (if using), and salt until smooth.
  3. Adjust the Flavor:
    • Taste and adjust the seasoning with additional salt or lemon juice as desired.
  4. Optional Enrichment:
    • For a richer flavor, whisk in 1-2 tablespoons of olive oil until fully incorporated.
  5. Chill and Serve:
    • Cover and refrigerate the aioli for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • For a stronger garlic flavor, let the aioli sit for an hour or more before serving.
  • Use roasted garlic for a milder, sweeter twist. Simply roast a garlic head, squeeze out the cloves, and mash them into the aioli.
  • Store in an airtight container in the refrigerator for up to 5 days.
