- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups Fruity Pebbles cereal
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
- In a bowl, cream butter and both sugars until light and fluffy. Beat in egg and vanilla.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture and mix until combined.
- Gently fold in Fruity Pebbles and white chocolate chips, if using.
- Scoop tablespoon-sized portions of dough onto baking sheets, spacing them 2 inches apart.
- Bake for 9–11 minutes, until edges are golden and centers are set.
- Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Roll dough balls in extra Fruity Pebbles for a more vibrant look.
- Cookies can be frozen before or after baking.
- Store in an airtight container at room temperature for up to 5 days.
- For a crunchier texture, bake an additional 1–2 minutes.
