For the Granola Base:
- 1 1/2 cups granola (store-bought or homemade)
- 2 tbsp honey or maple syrup
- 2 tbsp melted coconut oil or peanut butter
For the Yogurt Filling:
- 1 1/2 cups Greek yogurt (vanilla or plain)
- 2 tbsp honey or maple syrup (optional, for sweetness)
- 1 tsp vanilla extract (optional for extra flavor)
Toppings:
- Fresh berries (strawberries, blueberries, raspberries, etc.)
- Chopped nuts (almonds, walnuts, or pistachios)
- Mini chocolate chips or coconut flakes (optional)
Instructions
Step 1: Make the Granola Base
- Line a 12-cup muffin tin with silicone or paper liners.
- In a bowl, mix granola, honey, and melted coconut oil until well combined.
- Spoon about 1 tbsp of the granola mixture into each muffin cup and press firmly to form a base.
Step 2: Add the Yogurt Filling
- In another bowl, whisk together Greek yogurt, honey, and vanilla extract.
- Spoon about 2 tbsp of yogurt over each granola base.
Step 3: Add Toppings & Freeze
- Top each cup with fresh berries, chopped nuts, or chocolate chips.
- Place the muffin tin in the freezer for at least 2-3 hours, or until fully set.
Step 4: Serve & Enjoy!
- Remove from freezer and let sit for 2-3 minutes to soften slightly before eating.
- Enjoy immediately or store in a sealed container in the freezer for up to 1 month.

- Dairy-Free Option: Use coconut or almond yogurt.
- Extra Crunch? Add chia seeds or flaxseeds to the granola base.
