Description
Fried Mashed Potato Patties are a crispy, golden-brown snack or side dish made from leftover mashed potatoes mixed with cheese, herbs, and seasonings, then pan-fried to perfection.

- 2 cups mashed potatoes (preferably cold)
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 egg
- 1/4 cup all-purpose flour (plus more for dusting)
- Salt and pepper to taste
- 2 tablespoons oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheese, green onions, egg, flour, salt, and pepper. Mix until fully combined.
- Divide the mixture and shape into small patties, about 1/2 inch thick.
- Lightly dust each patty with flour to help them crisp up.
- Heat oil in a skillet over medium heat.
- Place patties in the skillet and cook for 3–4 minutes on each side or until golden brown and crispy.
- Remove and drain on paper towels before serving.
- Serve warm with sour cream, ketchup, or your favorite dip.
Notes
- Great way to use leftover mashed potatoes.
- Add cooked bacon bits or herbs for extra flavor.
- Can be made gluten-free using rice flour or gluten-free flour.
