Description

Fried Mashed Potato Patties are a crispy, golden-brown snack or side dish made from leftover mashed potatoes mixed with cheese, herbs, and seasonings, then pan-fried to perfection.


Ingredients

  • 2 cups mashed potatoes (preferably cold)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 egg
  • 1/4 cup all-purpose flour (plus more for dusting)
  • Salt and pepper to taste
  • 2 tablespoons oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheese, green onions, egg, flour, salt, and pepper. Mix until fully combined.
  2. Divide the mixture and shape into small patties, about 1/2 inch thick.
  3. Lightly dust each patty with flour to help them crisp up.
  4. Heat oil in a skillet over medium heat.
  5. Place patties in the skillet and cook for 3–4 minutes on each side or until golden brown and crispy.
  6. Remove and drain on paper towels before serving.
  7. Serve warm with sour cream, ketchup, or your favorite dip.

Notes

  • Great way to use leftover mashed potatoes.
