- 4 medium green tomatoes, sliced 1/4 inch thick

- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup buttermilk
- 1/2 cup cornmeal
- 1/2 cup breadcrumbs (optional for extra crunch)
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- Vegetable oil for frying
Instructions
- Sprinkle tomato slices with salt and let sit for 10 minutes. Pat dry with paper towels.
- Set up a breading station: place flour in one shallow dish. In another, whisk eggs and buttermilk. In a third, mix cornmeal, breadcrumbs (if using), pepper, and paprika.
- Dredge each tomato slice in flour, dip in the egg mixture, then coat with the cornmeal mixture.
- Heat 1/2 inch of oil in a skillet over medium-high heat.
- Fry tomatoes in batches until golden brown, about 2–3 minutes per side.
- Drain on paper towels and serve warm.
Notes
- Serve with ranch dressing, remoulade, or a spicy aioli for dipping.
- For a gluten-free version, use gluten-free flour and breadcrumbs.
- Use firm, fully green tomatoes for best results.
- Keep fried slices warm in a 200°F oven if frying in batches.
