- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Vegetable oil for frying
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 1/2 cup cucumber, sliced
- 1/4 cup croutons (optional)
- Ranch or honey mustard dressing for serving
Instructions
- Cut chicken breasts into strips. Place in a bowl with buttermilk, cover, and marinate for at least 30 minutes.
- In a shallow dish, mix flour, paprika, garlic powder, salt, and pepper.
- Heat vegetable oil in a skillet over medium heat.
- Dredge chicken strips in the seasoned flour and fry until golden brown and cooked through, about 4–5 minutes per side. Drain on paper towels.
- In a large bowl, combine salad greens, cherry tomatoes, cheddar cheese, red onion, and cucumber.
- Top with fried chicken strips and croutons, if using.
- Drizzle with dressing of choice and serve immediately.

- Use an air fryer for a lighter version of the fried chicken.
