Description
This fresh pea soup is light, creamy, and packed with the sweet flavor of spring peas. It’s easy to make and perfect as a starter or a light lunch. Serve it warm or chilled—either way, it’s delicious and refreshing.
Ingredients

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

4 cups fresh or frozen green peas

3 cups vegetable broth

1/2 cup fresh mint leaves (optional)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/2 cup heavy cream or coconut milk (optional, for creaminess)

Lemon juice, to taste
Instructions

Heat olive oil in a pot over medium heat.

Add chopped onion and cook for 3–4 minutes until softened.

Stir in garlic and cook for another 1 minute.

Add peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 8–10 minutes, until peas are tender.

Remove from heat. Stir in mint leaves, if using.

Blend the soup using an immersion blender or in batches in a blender until smooth.

Stir in cream or coconut milk, if using.

Season with salt, pepper, and a splash of lemon juice to brighten the flavor.

Notes

For a vegan version, use coconut milk instead of cream.
