Frito Corn Salad is a crunchy, creamy, and flavorful side dish made with sweet corn, crispy Fritos, cheese, and a tangy dressing. It’s the perfect quick-and-easy salad for potlucks, BBQs, or any casual get-together!
Ingredients

2 cans (15 oz each) whole kernel corn, drained

1 cup shredded cheddar cheese

1/2 cup diced red bell pepper

1/2 cup chopped green onions

1 cup mayonnaise

1 teaspoon chili powder (optional, for a little kick)

1 bag (9.25 oz) chili cheese or original Fritos, crushed slightly

Salt and pepper, to taste
Instructions

In a large bowl, mix together the corn, cheddar cheese, bell pepper, green onions, and mayonnaise.

Add chili powder if using, and season with salt and pepper to taste.

Chill in the fridge for at least 30 minutes for best flavor.

Just before serving, fold in the crushed Fritos so they stay crunchy.

Serve immediately and enjoy!
Notes

Don’t mix the Fritos in too early or they’ll get soggy—add them right before serving.

You can use frozen corn (thawed) or fresh corn in place of canned.
