Ingredients

Scale

  • 1 1/2 lbs (680g) beef stew meat or sirloin, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 tsp sugar (for caramelizing onions)
  • 1 tbsp flour
  • 3 cups (720ml) beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 8 oz (225g) egg noodles
  • 1 cup (100g) shredded Gruyère or Swiss cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  • Caramelize the Onions:

    • In a large skillet or pot, heat 1 tbsp olive oil over medium heat.
    • Add the sliced onions and sprinkle with 1 tsp sugar.
    • Cook for 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.
    • Add the minced garlic and cook for 1-2 minutes more. Transfer the onions to a bowl and set aside.
  • Cook the Beef:

    • In the same skillet, add the remaining 1 tbsp olive oil over medium-high heat.
    • Add the beef pieces, cooking until browned on all sides, about 5-7 minutes.
    • Stir in the flour, cooking for another 1-2 minutes to coat the beef.
  • Add Broth and Seasonings:

    • Pour in the beef broth, Worcestershire sauce, dried thyme, and black pepper.
    • Add the caramelized onions back to the pot.
    • Bring to a simmer and cook for 15-20 minutes, or until the beef is tender.
  • Cook the Noodles:

    • While the beef simmers, cook the egg noodles according to package instructions. Drain and set aside.
  • Combine Everything:

    • Stir the cooked egg noodles into the beef and onion mixture.
    • Add the shredded Gruyère or Swiss cheese, stirring until melted and well combined.
  • Serve:

    • Garnish with chopped fresh parsley and serve hot.

Notes

  • Make it cheesy: Add more cheese on top and broil for 2-3 minutes until bubbly.
  • Add mushrooms: Sauté sliced mushrooms with the onions for extra flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
