Description

These fiery Cajun shrimp stuffed jalapeños are a spicy, cheesy appetizer that’s perfect for parties or game day. Fresh jalapeños are stuffed with a flavorful mixture of shrimp, cream cheese, Cajun seasoning, and cheddar, then baked until golden and bubbly.


Ingredients

  • 12 large jalapeños, halved lengthwise and seeds removed
  • 1/2 pound (225 g) shrimp, peeled, deveined, and finely chopped
  • 4 ounces (115 g) cream cheese, softened
  • 1/2 cup (50 g) shredded cheddar cheese
  • 1/4 cup (30 g) shredded mozzarella cheese
  • 1 tablespoon Cajun seasoning (or to taste)
  • 1 clove garlic, minced
  • 1 tablespoon green onions, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

For garnish:

  • Chopped parsley or green onions
  • A sprinkle of Parmesan (optional)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Prepare the jalapeños:
    • Cut the jalapeños in half lengthwise and scoop out the seeds and membranes with a small spoon to create room for the filling.
  3. Cook the shrimp:
    • Heat olive oil in a skillet over medium heat. Add the chopped shrimp, Cajun seasoning, and minced garlic. Cook for 2–3 minutes, or until the shrimp is just cooked through. Remove from heat and let cool slightly.
  4. Make the filling:
    • In a mixing bowl, combine the cooked shrimp, cream cheese, cheddar cheese, mozzarella cheese, and green onions (if using). Mix until well blended. Taste and adjust seasoning with salt and black pepper, if needed.
  5. Stuff the jalapeños:
    • Spoon the shrimp and cheese mixture into each jalapeño half, pressing it down gently to fill.
  6. Bake:
    • Arrange the stuffed jalapeños on the prepared baking sheet. Bake for 15–20 minutes, or until the cheese is melted and the jalapeños are tender.
  7. Garnish and serve:
    • Sprinkle with chopped parsley or green onions and a touch of Parmesan, if desired. Serve warm.



Notes

  • For extra heat, leave some of the jalapeño seeds in the peppers.
  • Use pre-cooked shrimp to save time; just chop and mix into the filling.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer.
