Feather dumplings are light, fluffy additions to the classic chicken and dumplings dish. Made with simple ingredients, they absorb the rich flavors of the broth, creating a comforting and satisfying meal.

Ingredients

Scale

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1/4 teaspoon black pepper
  • 1 large egg, well beaten
  • 3 tablespoons unsalted butter, melted
  • Approximately 2/3 cup milk

Instructions

  • Prepare the Dry Ingredients: In a mixing bowl, sift together the flour, salt, baking powder, and black pepper.
  • Combine Wet Ingredients: In a separate bowl, mix the beaten egg and melted butter.
  • Form the Dough: Pour the egg and butter mixture into the dry ingredients. Gradually add milk, stirring until a moist, stiff batter forms. Be careful not to overmix.
  • Cook the Dumplings: Drop spoonfuls of the batter into the boiling chicken broth or stew. Cover the pot loosely and simmer for 18-20 minutes without lifting the lid, allowing the dumplings to cook through and become fluffy.

Notes

  • Ensure the broth is at a gentle boil before adding the dumplings to achieve the desired texture.
  • Avoid lifting the lid during cooking to maintain consistent heat and proper steaming of the dumplings.
  • For added flavor, consider incorporating chopped herbs like parsley or chives into the batter.
