Description

Falafel-spiced cucumber bites are refreshing and flavorful appetizers featuring crisp cucumber slices topped with a creamy chickpea mixture seasoned with traditional falafel spices.


Ingredients

  • 1 large cucumber, sliced into 1/2-inch rounds (about 20 slices)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley
  • Optional toppings: crumbled feta, chopped tomatoes, or a drizzle of olive oil

Instructions

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, cumin, coriander, paprika, salt, and pepper. Blend until smooth, adding a little water if needed for consistency.
  2. Transfer the mixture to a bowl and stir in chopped parsley.
  3. Place cucumber slices on a serving platter.
  4. Spoon or pipe about 1 teaspoon of the chickpea mixture onto each cucumber slice.
  5. Top with optional garnishes like feta, tomatoes, or olive oil if desired.
  6. Serve immediately or chill until ready to serve.

Notes

  • Use a piping bag for a neater presentation.
  • Mixture can be made a day ahead and stored in the fridge.
  • Add a pinch of cayenne for a spicier kick.
