Ingredients

- 1 large cucumber, sliced into 1/2-inch rounds (about 20 slices)
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
- Optional toppings: crumbled feta, chopped tomatoes, or a drizzle of olive oil
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, cumin, coriander, paprika, salt, and pepper. Blend until smooth, adding a little water if needed for consistency.
- Transfer the mixture to a bowl and stir in chopped parsley.
- Place cucumber slices on a serving platter.
- Spoon or pipe about 1 teaspoon of the chickpea mixture onto each cucumber slice.
- Top with optional garnishes like feta, tomatoes, or olive oil if desired.
- Serve immediately or chill until ready to serve.
Notes
- Use a piping bag for a neater presentation.
- Mixture can be made a day ahead and stored in the fridge.
- Add a pinch of cayenne for a spicier kick.
