Description

Easy Taco Soup is a hearty and flavorful one-pot meal made with ground beef, beans, corn, tomatoes, and taco seasoning—perfect for a quick weeknight dinner or cozy meal prep option.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, tortilla chips, chopped cilantro

Instructions

  1. In a large pot over medium heat, cook ground beef and onion until beef is browned and onion is soft, about 6–7 minutes. Drain excess fat if needed.
  2. Add garlic and cook for 1 more minute until fragrant.
  3. Stir in taco seasoning, black beans, kidney beans, corn, diced tomatoes, Rotel, and beef broth. Mix well.
  4. Bring soup to a boil, then reduce heat and simmer for 20–25 minutes to blend flavors.
  5. Season with salt and pepper to taste.
  6. Serve hot with your favorite toppings.

Notes

  • Swap ground beef with ground turkey or shredded chicken for a lighter version.
  • Adjust heat with mild or hot Rotel depending on your preference.
  • This soup freezes well—cool completely before storing in freezer-safe containers.
