- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 2 cups beef broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, tortilla chips, chopped cilantro
Instructions
- In a large pot over medium heat, cook ground beef and onion until beef is browned and onion is soft, about 6–7 minutes. Drain excess fat if needed.
- Add garlic and cook for 1 more minute until fragrant.
- Stir in taco seasoning, black beans, kidney beans, corn, diced tomatoes, Rotel, and beef broth. Mix well.
- Bring soup to a boil, then reduce heat and simmer for 20–25 minutes to blend flavors.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- Swap ground beef with ground turkey or shredded chicken for a lighter version.
- Adjust heat with mild or hot Rotel depending on your preference.
- This soup freezes well—cool completely before storing in freezer-safe containers.
