Description

These Easy Strawberry Crostini are the perfect balance of sweet and savory. Crisp toasted baguette slices are topped with creamy cheese, juicy strawberries, and a drizzle of balsamic glaze. They come together in minutes and are always a hit at gatherings!


Ingredients

  • 1 baguette, sliced into 1/2-inch rounds

  • 1 tablespoon olive oil (for brushing)

  • 1 cup fresh strawberries, diced

  • 1 tablespoon fresh basil, chopped

  • 1 teaspoon balsamic vinegar

  • 1 teaspoon honey (optional)

  • Pinch of salt

For the spread:

  • 1/2 cup ricotta cheese or cream cheese

  • 1 teaspoon honey (optional, for sweetening)

For garnish:

 

  • Balsamic glaze, for drizzling

  • Extra chopped basil (optional)


Instructions

  1. Toast the bread:

    • Preheat oven to 400°F (200°C).

    • Arrange baguette slices on a baking sheet and brush lightly with olive oil.

    • Bake for 7–9 minutes, or until golden and crisp. Let cool slightly.

  2. Prep the strawberry topping:

    • In a small bowl, mix diced strawberries, chopped basil, balsamic vinegar, honey (if using), and a pinch of salt. Let sit for 5–10 minutes to develop flavor.

  3. Assemble the crostini:

    • Spread each toast with a layer of ricotta or cream cheese.

    • Spoon the strawberry mixture on top.

    • Drizzle with balsamic glaze and sprinkle with extra basil if desired.

  4. Serve immediately while the crostini are crisp and fresh.


Notes

  • Great with goat cheese for a tangier flavor.

  • Add crushed pistachios or toasted almonds for crunch.

  • You can make the strawberry topping in advance and chill it until ready to serve.
