Description
This easy spicy chicken burrito is packed with tender chicken, melty cheese, spicy seasonings, and all your favorite fillings. Wrapped in a warm tortilla and ready in under 30 minutes, it’s perfect for meal prep or a satisfying on-the-go meal!
Ingredients

2 cups cooked chicken, shredded or chopped (rotisserie works great)

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes (optional, for extra heat)

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup black beans (rinsed and drained)

1/2 cup corn (optional)

1/2 cup salsa or hot sauce

Optional: sour cream, guacamole, lettuce, diced tomatoes, jalapeños
Instructions

In a skillet, heat olive oil over medium heat. Add chicken and season with chili powder, paprika, cumin, garlic powder, onion powder, red pepper flakes, salt, and pepper.

Stir well and cook for 3–4 minutes until heated through and coated in the spices.

Warm tortillas in a dry skillet or microwave until soft and pliable.

To assemble each burrito: layer rice, chicken, beans, corn, cheese, and salsa. Add any optional toppings you like.

Fold in the sides of the tortilla, then roll it up tightly from the bottom.

Optional: Place burritos seam-side down in a hot skillet and toast for 1–2 minutes per side until golden and crispy.
