Easy Snickerdoodle Bars are soft, chewy dessert bars with a buttery cinnamon-sugar flavor, just like the classic cookie but baked in one pan for simplicity. Perfect for parties, bake sales, or everyday treats.

- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 2 3/4 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tbsp granulated sugar (for topping)
- 2 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs and vanilla extract until well combined.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Spread the dough evenly in the prepared baking pan.
- In a small bowl, mix together the 2 tbsp granulated sugar and 2 tsp cinnamon. Sprinkle evenly over the top of the dough.
- Bake for 25–30 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Cool completely in the pan before slicing into bars and serving.
Notes
- For a slightly gooey center, bake on the lower end of the time range.
- Store in an airtight container at room temperature for up to 4 days.
- Add a pinch of nutmeg to the cinnamon-sugar topping for extra warmth.
