Description

This Easy Slow Cooker Chicken and Corn Soup is warm, hearty, and packed with flavor. Made with tender shredded chicken, sweet corn, and simple seasonings, it’s the perfect no-fuss recipe for busy weeknights or chilly days. Just toss everything in the slow cooker and let it simmer to perfection!


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs

  • 1 (15 oz) can sweet corn, drained

  • 1 (15 oz) can cream-style corn

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups low-sodium chicken broth

  • 1/2 tsp salt (adjust to taste)

  • 1/4 tsp black pepper

  • 1/2 tsp dried thyme or Italian seasoning

  • 1 tbsp butter (optional, for richness)

  • 2 tbsp cornstarch + 2 tbsp water (optional, to thicken)

 

  • Optional toppings: chopped green onions, fresh parsley, shredded cheese, or crushed crackers


Instructions

  1. Add chicken, corn, cream-style corn, onion, garlic, broth, salt, pepper, thyme (or Italian seasoning), and butter (if using) to the slow cooker.

  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and tender.

  3. Remove chicken, shred with two forks, and return to the slow cooker.

  4. If you’d like the soup thicker, stir in a cornstarch slurry and cook on high for 15–20 more minutes.

  5. Taste and adjust seasoning as needed.

  6. Serve hot with your favorite toppings!


Notes

  • Add a diced potato or 1/2 cup of frozen peas or carrots for extra heartiness.

  • Great for meal prep and freezer-friendly.

  • Swap in rotisserie chicken and cook for just 1–2 hours on high!
