- 1 lb large shrimp, peeled and deveined with tails on
- 1/2 cup all-purpose flour (for dredging)
- 1 cup all-purpose flour (for batter)
- 1 cup ice-cold water
- 1 large egg
- 1/2 tsp baking soda
- Vegetable oil, for deep frying
- Tempura dipping sauce, for serving
Instructions
- Pat the shrimp dry and make small slits on the underside to keep them from curling when fried.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Lightly dredge the shrimp in flour and shake off the excess.
- In a bowl, whisk the egg and ice-cold water together, then gently mix in the flour and baking soda. Do not overmix; the batter should be slightly lumpy.
- Dip the floured shrimp into the batter and immediately place them into the hot oil.
- Fry 2–3 shrimp at a time for about 2 minutes or until golden and crispy. Do not overcrowd the pan.
- Remove with a slotted spoon and drain on a paper towel-lined plate.
- Serve hot with tempura dipping sauce.
Notes
- Keep the batter cold for a crispier texture—place the bowl in a larger bowl filled with ice if needed.
- Use chopsticks or tongs to gently stir and flip the shrimp while frying.
- Serve with steamed rice or over a salad for a complete meal.
