Description

These bite-sized pancake poppers are fluffy, golden, and perfect for dipping! Quick to make and customizable with your favorite mix-ins, they’re great for breakfast, snacks, or brunch gatherings. Serve with maple syrup, chocolate sauce, or fresh fruit for a fun and delicious treat!


Ingredients

  • 1 cup (125g) all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup (180ml) buttermilk (or regular milk with 1 tsp vinegar)
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract

Optional Mix-ins:

  • Mini chocolate chips 🍫
  • Blueberries 🫐
  • Chopped nuts 🌰
  • Cinnamon sugar 🍩



Instructions

1. Preheat & Prep

  1. Preheat oven to 190°C (375°F).
  2. Grease a mini muffin tin or line with mini muffin liners.

2. Make the Batter

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract until combined.
  3. Gradually fold the wet ingredients into the dry ingredients. Do not overmix!

3. Fill & Bake

  1. Spoon 1 tablespoon of batter into each mini muffin cup.
  2. Add mix-ins like chocolate chips or blueberries if desired.
  3. Bake for 10-12 minutes, or until golden and a toothpick comes out clean.

4. Serve & Enjoy

  1. Let cool for a few minutes, then remove from the pan.
  2. Serve warm with maple syrup, honey, or fruit jam for dipping!

Notes

  • No mini muffin pan? Use a regular muffin tin and bake for 15-18 minutes.
  • Store in an airtight container for 3 days, or freeze for up to 2 months.
  • Reheat in the microwave for 15 seconds before serving.
