A zesty and flavorful Mexican chicken marinade that infuses chicken with bold spices, citrus, and herbs, perfect for grilling, baking, or pan-searing.

- 1/4 cup olive oil
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons orange juice
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
- In a medium bowl, whisk together olive oil, lime juice, orange juice, garlic, cumin, chili powder, paprika, oregano, salt, and pepper.
- Add chopped cilantro if using, and mix well.
- Place chicken (breasts, thighs, or drumsticks) in a resealable plastic bag or shallow dish.
- Pour marinade over the chicken, ensuring all pieces are coated.
- Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4–6 hours or overnight for best flavor.
- Remove chicken from marinade and cook as desired — grill, bake, or pan-sear.
Notes
- This marinade is enough for about 1.5 to 2 pounds of chicken.
- Do not reuse leftover marinade unless boiled for safety.
- Can also be used for shrimp or vegetables.
