Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat a lightly oiled or buttered skillet over medium heat.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface and edges look set, then flip and cook another 1-2 minutes until golden brown.
- Serve warm with your favorite toppings like syrup, butter, or fresh fruit.
Notes
- Do not overmix the batter; a few lumps are okay.
