  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz / 28 g) taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1 can (10 oz / 280 g) diced tomatoes with green chilies (e.g., Rotel), drained
  • 8 (8-inch) flour or corn tortillas
  • 2 cups (200 g) shredded cheddar or Mexican blend cheese

For the Enchilada Sauce:

  • 1 can (10 oz / 280 g) red enchilada sauce (store-bought or homemade)
  • 1/2 cup (120 ml) tomato sauce (optional, for extra sauciness)

For Topping:

  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream (optional)

Instructions

🍳 Prepare the Ground Beef Filling:

  1. Cook the Beef:

    • In a large skillet, heat olive oil over medium heat.
    • Add ground beef and cook until browned, breaking it apart with a spatula (5-7 minutes).
  2. Add Onions and Garlic:

    • Stir in chopped onion and garlic, and sauté until softened (2-3 minutes).
  3. Season the Filling:

    • Add taco seasoning and diced tomatoes with green chilies.
    • Cook for 2-3 minutes until well combined.
    • Remove from heat and set aside.

🌯 Assemble the Enchiladas:

  1. Prepare Baking Dish:

    • Preheat your oven to 375°F (190°C).
    • Spread 1/2 cup of enchilada sauce evenly over the bottom of a 9×13 inch (23×33 cm) baking dish.
  2. Fill the Tortillas:

    • Spoon 1/4 cup of the beef mixture into each tortilla.
    • Sprinkle with a bit of shredded cheese, then roll tightly.
  3. Arrange in Dish:

    • Place the rolled tortillas seam-side down in the prepared dish.

🍅 Top with Sauce and Cheese:

  1. Add Sauce:

    • Pour the remaining enchilada sauce evenly over the top of the rolled tortillas.
  2. Add Cheese:

    • Sprinkle with the remaining shredded cheese.

🔥 Bake the Enchiladas:

  1. Bake:

    • Bake for 20 minutes, until the cheese is melted and bubbly.
  2. Optional Broil:

    • For a golden, bubbly top, broil for 1-2 minutes, keeping a close eye to avoid burning.

🍽️ Serve:

  1. Garnish and Serve:

    • Top with fresh cilantro, green onions, and a dollop of sour cream if desired.
  2. Serving Suggestions:

    • Serve with Spanish rice, refried beans, or a fresh green salad for a complete meal.

Notes

  • Make It Spicy: Add diced jalapeños or a splash of hot sauce to the beef filling for extra heat.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezer Friendly: Assemble and freeze before baking. When ready to eat, bake directly from frozen at 350°F (175°C) for 30-40 minutes.
