Ingredients

2 lbs boneless, skinless chicken breasts or thighs

Juice of 2 limes

Zest of 1 lime

1/2 cup chicken broth

1/3 cup chopped fresh cilantro

1 tbsp olive oil

3 cloves garlic, minced

1 tsp cumin

1/2 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

Optional: 1 jalapeño, finely diced (for heat)

Extra chopped cilantro and lime wedges for serving
Instructions

Place chicken in the bottom of your slow cooker.

In a small bowl, whisk together lime juice, zest, chicken broth, olive oil, garlic, cumin, chili powder, salt, and pepper. Stir in cilantro.

Pour the mixture over the chicken. Add jalapeño if using.

Cover and cook on low for 5–6 hours or high for 2.5–3.5 hours, until chicken is tender and easily shreds.

Shred chicken directly in the slow cooker and toss to coat in the juices.
