For the Soup:
- 1 lb ground beef (or Italian sausage)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 8 lasagna noodles, broken into pieces
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
For the Ricotta Topping:
- 1/2 cup ricotta cheese
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon salt
Instructions
- Cook the meat – In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
- Sauté the aromatics – Add diced onion and garlic, cooking for 2-3 minutes until softened.
- Simmer the soup – Stir in beef broth, crushed tomatoes, diced tomatoes, tomato paste, Italian seasoning, salt, black pepper, and red pepper flakes. Bring to a simmer and cook for 10 minutes.
- Cook the pasta – Add broken lasagna noodles and simmer for 10-12 minutes, until pasta is tender.
- Make it creamy – Stir in heavy cream, mozzarella, and Parmesan cheese until melted.
- Prepare the ricotta topping – In a small bowl, mix ricotta, parsley, and salt.
- Serve & enjoy – Ladle soup into bowls and top with a dollop of ricotta mixture. Enjoy warm!
