- 2 cups cooked shredded chicken (rotisserie works great!)
- 1 cup shredded cheddar cheese (or Mexican blend)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 2 tablespoons butter or oil (for cooking)
- 1/4 cup salsa (optional)
- 1/4 cup sour cream (for serving)
- 2 tablespoons chopped fresh cilantro (optional)
Instructions
- Prepare the filling – In a bowl, mix shredded chicken with garlic powder, onion powder, chili powder, salt, and black pepper. Stir in salsa if using.
- Assemble the quesadillas – Lay a tortilla flat, sprinkle half with shredded cheese, add seasoned chicken, then top with more cheese. Fold in half. Repeat with remaining tortillas.
- Cook – Heat a skillet over medium heat and melt 1 tablespoon butter. Cook each quesadilla for 2-3 minutes per side, until golden brown and crispy.
- Serve & enjoy – Slice into wedges and serve warm with sour cream and cilantro.
