Description

 These Easy Chicken Quesadillas are crispy, cheesy, and packed with juicy chicken. Perfect for a quick lunch, dinner, or snack, they’re ready in just 20 minutes with simple ingredients!


Ingredients

  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 2 tablespoons butter or oil (for cooking)
  • 1/4 cup salsa (optional)
  • 1/4 cup sour cream (for serving)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  • Prepare the filling – In a bowl, mix shredded chicken with garlic powder, onion powder, chili powder, salt, and black pepper. Stir in salsa if using.
  • Assemble the quesadillas – Lay a tortilla flat, sprinkle half with shredded cheese, add seasoned chicken, then top with more cheese. Fold in half. Repeat with remaining tortillas.
  • Cook – Heat a skillet over medium heat and melt 1 tablespoon butter. Cook each quesadilla for 2-3 minutes per side, until golden brown and crispy.
  • Serve & enjoy – Slice into wedges and serve warm with sour cream and cilantro.
