Description

A quick and flavorful Italian appetizer made with toasted bread slices topped with a fresh tomato, garlic, basil, and olive oil mixture.


Ingredients

  • 1 baguette or crusty bread, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil (plus more for drizzling)
  • 2 garlic cloves (1 for rubbing bread, 1 minced)
  • 4 medium tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange bread slices on a baking sheet and brush lightly with olive oil.
  3. Toast in the oven for 6–8 minutes, or until golden and crisp. Remove and rub one side of each slice with a garlic clove while still warm.
  4. In a bowl, combine diced tomatoes, minced garlic, basil, salt, pepper, and a drizzle of olive oil. Add balsamic vinegar if using.
  5. Spoon the tomato mixture onto each toasted bread slice.
  6. Serve immediately for the best texture and flavor.

Notes

  • Use ripe, firm tomatoes for the best flavor and texture.
  • Can be made with cherry tomatoes for a sweeter twist.
  • For a variation, add mozzarella or a drizzle of pesto before serving.
