A quick and flavorful Italian appetizer made with toasted bread slices topped with a fresh tomato, garlic, basil, and olive oil mixture.

- 1 baguette or crusty bread, sliced into 1/2-inch pieces
- 2 tablespoons olive oil (plus more for drizzling)
- 2 garlic cloves (1 for rubbing bread, 1 minced)
- 4 medium tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Arrange bread slices on a baking sheet and brush lightly with olive oil.
- Toast in the oven for 6–8 minutes, or until golden and crisp. Remove and rub one side of each slice with a garlic clove while still warm.
- In a bowl, combine diced tomatoes, minced garlic, basil, salt, pepper, and a drizzle of olive oil. Add balsamic vinegar if using.
- Spoon the tomato mixture onto each toasted bread slice.
- Serve immediately for the best texture and flavor.
Notes
- Use ripe, firm tomatoes for the best flavor and texture.
- Can be made with cherry tomatoes for a sweeter twist.
- For a variation, add mozzarella or a drizzle of pesto before serving.
- Best assembled just before serving to keep the bread crisp.
