- 2 cups fresh broccoli florets, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko or regular)
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning (optional)
Instructions
Prepare the Broccoli:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Bring a pot of water to a boil. Add broccoli and cook for 2 minutes, then drain and transfer to an ice water bath. Pat dry and finely chop.
Mix the Ingredients:
- In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, black pepper, and Italian seasoning. Mix well until the mixture holds together.
Shape & Bake:
- Scoop out about 1 tablespoon of the mixture and shape it into small balls or patties. Place them on the prepared baking sheet.
- Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
Serve:
- Remove from the oven and let cool slightly. Serve warm with ranch, marinara, or your favorite dipping sauce!
Notes
- Air Fryer Method: Cook at 375°F for 10–12 minutes, shaking halfway through.
- Make Ahead: Assemble and refrigerate the mixture up to a day in advance.
- Variations: Swap cheddar for mozzarella or add finely chopped carrots for extra veggies.
