- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried parsley (or 1 tbsp fresh parsley, chopped)
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lemon (zest and juice)
- Lemon wedges (for serving)

- Preheat your oven to 400°F (200°C). Line a baking sheet or dish with parchment paper or lightly grease with cooking spray.
- Prepare the Seasoning:
- In a small bowl, mix olive oil, minced garlic, smoked paprika, parsley, onion powder, salt, and pepper. Add lemon zest and 1 tbsp of lemon juice to the mixture.
- Season the Cod:
- Pat the cod fillets dry with paper towels. Arrange them in the prepared baking dish in a single layer. Brush the seasoning mixture evenly over each fillet.
- Bake the Cod:
- Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Serve:
- Remove from the oven and drizzle with additional lemon juice. Garnish with fresh parsley and serve with lemon wedges.

- For extra flavor, sprinkle the fillets with Parmesan cheese before baking.
