Description

  • 4 cod fillets (about 1 1/2 lbs or 680g)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried parsley (or 1 tbsp fresh parsley, chopped)
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon (zest and juice)
  • Lemon wedges (for serving)

Instructions

    • Preheat your oven to 400°F (200°C). Line a baking sheet or dish with parchment paper or lightly grease with cooking spray.
  1. Prepare the Seasoning:
    • In a small bowl, mix olive oil, minced garlic, smoked paprika, parsley, onion powder, salt, and pepper. Add lemon zest and 1 tbsp of lemon juice to the mixture.
  2. Season the Cod:
    • Pat the cod fillets dry with paper towels. Arrange them in the prepared baking dish in a single layer. Brush the seasoning mixture evenly over each fillet.
  3. Bake the Cod:
    • Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  4. Serve:
    • Remove from the oven and drizzle with additional lemon juice. Garnish with fresh parsley and serve with lemon wedges.
