Ingredients
1 lb ground beef
1 packet (1 oz) taco seasoning
1 head iceberg lettuce, chopped
1 large tomato, diced
1 cup shredded cheddar cheese
1 can (15.5 oz) kidney beans, drained and rinsed
1 bag (9.75 oz) Doritos, lightly crushed
1 cup French or Catalina dressing
Instructions
Cook the Ground Beef: In a skillet over medium heat, brown the ground beef until it’s fully cooked. Drain any excess grease.
Add Taco Seasoning: Stir in the taco seasoning to the cooked beef, following the instructions on the packet (usually, this involves adding a specific amount of water and simmering for a few minutes).
Prepare the Salad Base: In a large bowl, combine the chopped iceberg lettuce, diced tomato, shredded cheese, and drained and rinsed kidney beans.
Add Beef to Salad: Once the seasoned beef has cooled slightly, add it to the salad bowl.
Crush Doritos: Lightly crush the Doritos. You can do this by gently pressing the closed bag to break the chips into smaller pieces. Be careful not to crush them into dust – you want some texture.
Combine Everything: Add the crushed Doritos to the salad. Pour the French or Catalina dressing over the top.
Toss the Salad: Toss everything together until well mixed. The Doritos will soften slightly from the dressing but should retain some crunch.
Serve: Serve the salad immediately. If you’re not serving it right away, keep the Doritos and dressing separate and add them just before serving to maintain the crunch of the chips.
