Description

Doritos Taco Casserole is a fun and flavorful dish layered with seasoned ground beef, creamy sauce, cheese, and crunchy Doritos—perfect for taco night or a casual family dinner.


Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10.5 ounces) cream of mushroom or cream of chicken soup
  • 1/2 cup sour cream
  • 1 can (10 ounces) Rotel (diced tomatoes with green chilies), drained
  • 2 cups shredded cheddar or Mexican blend cheese, divided
  • 1 bag (9.75 ounces) nacho cheese Doritos, slightly crushed
  • Optional toppings: diced tomatoes, sliced olives, chopped lettuce, green onions, jalapeños

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain any excess fat.
  3. Add taco seasoning and water to the skillet. Simmer for 3-5 minutes until thickened.
  4. Stir in cream of mushroom soup, sour cream, Rotel, and 1 cup of shredded cheese. Mix until combined and heated through.
  5. Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with the beef mixture.
  6. Sprinkle remaining Doritos on top and finish with the remaining 1 cup of cheese.
  7. Bake for 20–25 minutes or until cheese is melted and bubbly.
  8. Top with optional toppings before serving if desired.

Notes

  • Swap beef with ground turkey or shredded chicken for variation.
  • For a spicier version, use spicy taco seasoning and hot Rotel.
  • Add a layer of black beans or corn for extra texture and flavor.
