Doritos Taco Casserole is a fun and flavorful dish layered with seasoned ground beef, creamy sauce, cheese, and crunchy Doritos—perfect for taco night or a casual family dinner.

- 1 pound ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (10.5 ounces) cream of mushroom or cream of chicken soup
- 1/2 cup sour cream
- 1 can (10 ounces) Rotel (diced tomatoes with green chilies), drained
- 2 cups shredded cheddar or Mexican blend cheese, divided
- 1 bag (9.75 ounces) nacho cheese Doritos, slightly crushed
- Optional toppings: diced tomatoes, sliced olives, chopped lettuce, green onions, jalapeños
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain any excess fat.
- Add taco seasoning and water to the skillet. Simmer for 3-5 minutes until thickened.
- Stir in cream of mushroom soup, sour cream, Rotel, and 1 cup of shredded cheese. Mix until combined and heated through.
- Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with the beef mixture.
- Sprinkle remaining Doritos on top and finish with the remaining 1 cup of cheese.
- Bake for 20–25 minutes or until cheese is melted and bubbly.
- Top with optional toppings before serving if desired.
Notes
- Swap beef with ground turkey or shredded chicken for variation.
- For a spicier version, use spicy taco seasoning and hot Rotel.
- Add a layer of black beans or corn for extra texture and flavor.
