Cruffins are a delightful hybrid of croissants and muffins, featuring buttery, flaky layers baked in muffin tins. These treats are easy to customize with sweet or savory fillings, making them perfect for breakfast, dessert, or a special snack.

For the Dough

  • 3 cups (375 g) all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp (1 packet) active dry yeast
  • 3/4 cup (180 ml) warm milk
  • 1/4 cup (60 ml) unsalted butter, melted
  • 1 egg

For the Butter Layers

  • 1/2 cup (115 g) unsalted butter, softened

Optional Fillings

  • Cinnamon sugar
  • Jam or chocolate spread
  • Grated cheese (for a savory option)

For Topping

  • Powdered sugar or melted chocolate for sweet cruffins
  • Flaky salt for savory cruffins

Instructions

1. Make the Dough

  1. In a bowl, whisk together the flour, sugar, salt, and yeast.
  2. Add the warm milk, melted butter, and egg. Mix until a rough dough forms.
  3. Knead the dough on a floured surface for 8–10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes.
  4. Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

2. Roll and Layer

  1. Punch down the dough and divide it into 6 equal pieces.
  2. Roll out one piece into a very thin rectangle (as thin as you can without tearing). Spread a thin layer of softened butter over the surface.
  3. If desired, sprinkle with cinnamon sugar, jam, or another filling.
  4. Roll the rectangle tightly into a log and then cut it lengthwise down the middle to create two long strips.

3. Shape the Cruffins

  1. Roll each strip into a coil, with the cut layers facing outward to show the layers. Place the coiled dough into a greased muffin tin.
  2. Repeat with the remaining dough pieces. Cover the tin lightly and let the cruffins rise for 30 minutes.

4. Bake

  1. Preheat your oven to 375°F (190°C).
  2. Bake the cruffins for 20–25 minutes, or until golden brown and flaky.

5. Cool and Decorate

  1. Allow the cruffins to cool in the tin for 10 minutes before transferring to a wire rack.
  2. Dust with powdered sugar, drizzle with chocolate, or sprinkle with flaky salt, depending on the filling.

Notes

  • Make Ahead: The dough can be made the night before and stored in the refrigerator. Bring it to room temperature before shaping.
  • Storage: Store in an airtight container at room temperature for up to 2 days, or freeze for up to a month. Reheat in the oven for a fresh-from-the-oven taste.
