Description

These Dark Chocolate Coconut Bites are rich, chewy, and naturally sweetened with maple syrup. With just 5 simple ingredients, they’re an easy, no-bake treat that tastes like a healthier version of your favorite candy bar.


Ingredients

  • 1 1/2 cups unsweetened shredded coconut

  • 1/4 cup coconut oil (melted)

  • 1/4 cup maple syrup or honey

  • 1/2 teaspoon vanilla extract

  • Pinch of sea salt

  • 4 oz dark chocolate (dairy-free if needed), chopped or in chips

  • Optional: extra sea salt or coconut for sprinkling


Instructions

  1. Make the Coconut Base:
    In a food processor, combine shredded coconut, melted coconut oil, maple syrup, vanilla, and salt. Pulse until the mixture sticks together and becomes slightly creamy (about 30–60 seconds).

  2. Shape the Bites:
    Scoop out heaping tablespoons and form into small rectangles or balls. Place on a parchment-lined tray. Freeze for 15–20 minutes until firm.

  3. Melt the Chocolate:
    Melt dark chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.

  4. Dip or Drizzle:
    Dip each coconut bite in melted chocolate, or drizzle the chocolate over the tops. Return to the tray and sprinkle with extra sea salt or coconut if desired.

  5. Chill and Serve:
    Place back in the freezer for 10–15 minutes to set. Store in the fridge for up to 2 weeks or freeze for longer storage.


Notes

  • Use a silicone mold for uniform shapes.

  • Add almond or cashew butter for a richer filling.

  • Make it sweeter by adding a bit more maple syrup to the coconut base.
