Description

Curried sausages are a comforting, hearty dish featuring juicy sausages in a flavorful curry sauce. This family favorite is simple to prepare and pairs perfectly with rice, mashed potatoes, or crusty bread for a satisfying meal.

  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium apple, peeled and grated (optional, for sweetness)
  • 2 tablespoons curry powder
  • 2 cups beef or chicken stock
  • 1 cup coconut milk or cream
  • 2 teaspoons cornstarch (optional, for thickening)
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Cook the Sausages:
    • Heat a large skillet or pot over medium heat. Add the sausages and cook until browned on all sides (they don’t need to be fully cooked through). Remove from the skillet and set aside.
  2. Sauté the Vegetables:
    • In the same skillet, add the olive oil. Sauté the onion, garlic, carrots, and potatoes for 3–5 minutes until softened.
  3. Add Curry Flavor:
    • Sprinkle the curry powder over the vegetables and stir for 1 minute until fragrant.
  4. Simmer the Sauce:
    • Pour in the stock and coconut milk, stirring to combine. Add the grated apple (if using) and Worcestershire sauce. Bring to a gentle boil.
  5. Add the Sausages:
    • Slice the sausages into chunks (or leave them whole) and return them to the skillet. Reduce the heat to low and simmer for 15–20 minutes, or until the potatoes and carrots are tender, and the sausages are fully cooked.
  6. Thicken the Sauce (Optional):
    • If a thicker sauce is desired, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir it into the sauce and cook for 2–3 minutes until thickened.
  7. Season and Serve:
    • Taste and adjust seasoning with salt and pepper. Serve the curried sausages over rice or mashed potatoes, garnished with fresh parsley or cilantro.
