Description

  • 1 teaspoon honey (or maple syrup for vegan option)
  • 1 teaspoon sriracha or chili garlic sauce (adjust for spice level)
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 12 tablespoons water (to thin, as needed)

Instructions

  • Prep the Cucumbers:

    • Slice cucumbers into thin rounds or spears.
    • Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
    • Pat dry with a paper towel.
  • Make the Peanut Sauce:

    • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, garlic, and ginger.
    • Add water as needed until the sauce is smooth and pourable.
  • Toss & Serve:

    • Drizzle the peanut sauce over the cucumbers and toss gently to coat.
    • Garnish with sesame seeds and chopped cilantro or green onions.
