Description

Cucumber Salad with Blueberries is a fresh and unexpected combination that totally works! Cool cucumbers and juicy blueberries are tossed in a light honey-lime dressing with fresh herbs for a sweet-tangy bite. It’s a refreshing summer side that pairs well with grilled meats, seafood, or can be enjoyed on its own.


Ingredients

  • 2 cups thinly sliced English cucumber (or Persian cucumbers)

  • 1 cup fresh blueberries

  • 1/4 cup thinly sliced red onion (optional)

  • 2 tbsp chopped fresh mint or basil

  • 1 tbsp chopped fresh parsley (optional)

  • 2 tbsp crumbled feta cheese (optional, for a savory twist)

For the Dressing:

  • 1 1/2 tbsp honey

  • 2 tbsp fresh lime juice

  • 1 tbsp olive oil

  • Pinch of salt and black pepper


Instructions

  1. In a small bowl or jar, whisk together honey, lime juice, olive oil, salt, and pepper.

  2. In a large bowl, combine sliced cucumber, blueberries, red onion (if using), and fresh herbs.

  3. Drizzle the dressing over the salad and gently toss to coat.

  4. Top with crumbled feta, if desired.

  5. Chill for 10–15 minutes before serving for best flavor.


Notes

  • Use mint for a fresh, sweet flavor, or basil for a more savory profile.

  • Add a handful of arugula or spinach for more greens.

 

  • Feta adds a salty contrast, but it’s totally optional if you want to keep it sweet and light.
