Description

Crustless Quiche is a simple, low-carb breakfast or brunch dish packed with eggs, cheese, and vegetables or meats, all baked into a fluffy, golden casserole without the hassle of a crust.

Ingredients

Units Scale
  • 6 large eggs
  • 1 cup milk (or half-and-half for a richer texture)
  • 1 cup shredded cheese (cheddar, Swiss, or your choice)
  • 1/2 cup diced onion
  • 1 cup chopped spinach or broccoli (cooked and drained)
  • 1/2 cup cooked bacon or diced ham (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in cheese, onion, vegetables, and meat (if using). Season with salt and pepper.
  4. Pour the mixture into the prepared baking dish and smooth the top.
  5. Bake for 30–35 minutes, or until the quiche is set and the top is lightly golden.
  6. Let cool for 5–10 minutes before slicing and serving.

Notes

  • Customize with your favorite vegetables and cheeses.
  • Make ahead and refrigerate; reheat individual slices as needed.
  • For a dairy-free version, use non-dairy milk and skip the cheese or use a substitute.
