Description

  • 1/4 cup red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup crumbled feta or shredded cheddar (optional)
  • 1/4 cup chopped pecans or almonds (optional)
  • For Hot Honey:
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon apple cider vinegar
  • For Dressing:
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Warm over low heat for 2–3 minutes, then set aside to cool.
  2. In a separate bowl, whisk together mayonnaise (or yogurt), lemon juice, Dijon mustard, salt, and pepper to make the dressing.
  3. In a large salad bowl, layer salad greens, cherry tomatoes, cucumber, red onion, carrots, and nuts or cheese if using.
  4. Add the crispy chicken pieces on top.
  5. Drizzle with the prepared dressing and a generous spoonful of hot honey.
  6. Toss lightly to combine or serve as layered for presentation.
