Description

Tender and flavorful chicken leg quarters slow-cooked in a crockpot with savory seasonings, perfect for an easy hands-off dinner.

Ingredients

Units Scale
  • 4 chicken leg quarters
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon soy sauce (optional)
  • 1 onion, sliced (optional)

Instructions

  1. Pat chicken leg quarters dry with paper towels.
  2. Rub each piece with olive oil and season with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  3. Place sliced onions (if using) at the bottom of the crockpot.
  4. Arrange the seasoned chicken leg quarters on top of the onions.
  5. Pour chicken broth and soy sauce (if using) around the chicken in the crockpot.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  7. Optional: For crispy skin, place the chicken under a broiler for 3-5 minutes after slow cooking.
  8. Serve hot with sides like mashed potatoes, rice, or vegetables.

Notes

  • Use skin-on chicken for the best flavor and moisture retention.
  • Broil briefly after slow cooking for crispier skin.
  • Add root vegetables like carrots and potatoes to make a complete one-pot meal.
  • Leftovers can be refrigerated for up to 3 days or frozen for later use.
