- 4 boneless, skinless chicken breasts (or thighs)
- 1 kg (about 2 lbs) baby potatoes, halved
- 1 onion, sliced
- 3 garlic cloves, minced
- 1/4 cup olive oil or melted butter
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Place the halved potatoes and sliced onions in the bottom of the crockpot.
- Season the chicken breasts with salt, pepper, paprika, thyme, and rosemary.
- Place the seasoned chicken on top of the potatoes.
- In a small bowl, mix olive oil (or melted butter) with minced garlic, then drizzle over the chicken and potatoes.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and the potatoes are soft.
- Garnish with fresh parsley before serving if desired.
Notes
- Use bone-in chicken thighs for more flavor and moisture if preferred.
- Try adding carrots or green beans for a more complete one-pot meal.
- Leftovers store well and can be reheated for meal prep.
- For a crispier finish, broil the chicken in the oven for 3–5 minutes before serving.
