Description

An easy and hearty crockpot meal featuring tender chicken and flavorful potatoes slow-cooked together with herbs and seasonings for a comforting one-pot dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 kg (about 2 lbs) baby potatoes, halved
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1/4 cup olive oil or melted butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the halved potatoes and sliced onions in the bottom of the crockpot.
  2. Season the chicken breasts with salt, pepper, paprika, thyme, and rosemary.
  3. Place the seasoned chicken on top of the potatoes.
  4. In a small bowl, mix olive oil (or melted butter) with minced garlic, then drizzle over the chicken and potatoes.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and the potatoes are soft.
  6. Garnish with fresh parsley before serving if desired.

Notes

  • Use bone-in chicken thighs for more flavor and moisture if preferred.
  • Try adding carrots or green beans for a more complete one-pot meal.
  • Leftovers store well and can be reheated for meal prep.
  • For a crispier finish, broil the chicken in the oven for 3–5 minutes before serving.
