Description

This Crockpot Cheesy Potatoes and Kielbasa recipe is a comforting and hearty meal made with tender potatoes, smoky kielbasa, and a rich, creamy cheese sauce. The slow cooker does all the work, making this a perfect dish for busy weeknights or as a crowd-pleasing potluck dish!

  • 1 (32-ounce) bag frozen diced hash brown potatoes (or 6 cups fresh diced potatoes)
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup Velveeta cheese, cubed (optional for extra creaminess)
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter, cubed
  • 1/4 cup chopped green onions or parsley (for garnish)

Instructions

  1. Prepare the Slow Cooker:
    Spray the inside of a 6-quart crockpot with nonstick cooking spray for easy cleanup.

  2. Combine Ingredients:
    In the crockpot, add the sliced kielbasa, hash brown potatoes, cream of chicken soup, sour cream, milk, shredded cheddar cheese, Velveeta (if using), chopped onion, garlic powder, smoked paprika, salt, and pepper. Stir until well combined.

  3. Add Butter:
    Dot the top of the mixture with butter cubes.

  4. Cook:
    Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are tender and the cheese is fully melted.

  5. Stir and Serve:
    Give the mixture a good stir before serving. Garnish with chopped green onions or parsley if desired.
