Description

Crockpot Bourbon Chicken is a savory and slightly sweet dish made with tender chicken slow-cooked in a rich bourbon-infused sauce, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons sliced green onions (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. Place the chicken thighs in the bottom of the crockpot.
  2. In a bowl, whisk together bourbon, soy sauce, ketchup, apple cider vinegar, brown sugar, garlic, ginger, and red pepper flakes.
  3. Pour the sauce over the chicken in the crockpot.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and cooked through.
  5. Remove the chicken and shred or chop into bite-sized pieces.
  6. In a small bowl, mix cornstarch with water to form a slurry, then stir into the sauce in the crockpot.
  7. Return the chicken to the crockpot and stir to combine. Let cook on high for an additional 15-20 minutes until the sauce thickens.
  8. Serve hot over rice, garnished with sliced green onions.

Notes

  • For a less sweet version, reduce the brown sugar to 1/3 cup.
  • You can substitute apple juice for bourbon if you prefer a non-alcoholic version.
  • Great for meal prep — leftovers taste even better the next day.
