- 2 lbs boneless, skinless chicken thighs
- 1/2 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 1/2 cup brown sugar
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 tablespoons sliced green onions (for garnish)
- Cooked white rice (for serving)
Instructions
- Place the chicken thighs in the bottom of the crockpot.
- In a bowl, whisk together bourbon, soy sauce, ketchup, apple cider vinegar, brown sugar, garlic, ginger, and red pepper flakes.
- Pour the sauce over the chicken in the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and cooked through.
- Remove the chicken and shred or chop into bite-sized pieces.
- In a small bowl, mix cornstarch with water to form a slurry, then stir into the sauce in the crockpot.
- Return the chicken to the crockpot and stir to combine. Let cook on high for an additional 15-20 minutes until the sauce thickens.
- Serve hot over rice, garnished with sliced green onions.
Notes
- For a less sweet version, reduce the brown sugar to 1/3 cup.
- You can substitute apple juice for bourbon if you prefer a non-alcoholic version.
- Great for meal prep — leftovers taste even better the next day.
