Crock Pot Sausage and Peppers is an easy, flavorful slow cooker recipe made with Italian sausage, bell peppers, onions, and marinara sauce. It’s a no-fuss comfort food meal that’s perfect served on hoagie rolls, over pasta, or with rice. Let your slow cooker do all the work!
Ingredients

2 lbs Italian sausage links (mild, sweet, or spicy)

3 bell peppers (red, green, yellow), sliced

1 large yellow onion, sliced

3 cloves garlic, minced

1 (24 oz) jar marinara sauce or crushed tomatoes

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

Optional: 1/4 tsp red pepper flakes (for heat)

Optional garnish: chopped parsley or grated Parmesan
Instructions

Optional: Brown the sausage in a skillet over medium heat for 2–3 minutes per side to enhance flavor, then transfer to the slow cooker.

Add sliced peppers, onions, and garlic on top of the sausage.

Pour marinara sauce over everything and sprinkle with Italian seasoning, salt, pepper, and red pepper flakes if using.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until sausage is fully cooked and peppers are tender.

Serve whole or slice the sausage before serving. Enjoy over rice, pasta, or in toasted hoagie rolls.

Use chicken sausage or turkey sausage for a lighter version.
