Ingredients
- 6 medium russet potatoes, peeled & diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 1 cup heavy cream (or whole milk)
- 2 cups shredded cheddar cheese
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup green onions, chopped (for garnish)
- 6 slices bacon, cooked & crumbled (optional)
Instructions

Prep & Add Ingredients:
Add diced potatoes, onion, garlic, broth, salt, pepper, and paprika to the slow cooker. -
Cook Until Tender:
- Low: 6-8 hours
- High: 3-4 hours
Cook until potatoes are fork-tender.

Add Dairy & Cheese:
