- 1 cup jarred roasted red peppers, drained
- 2 cloves garlic
- 1/4 cup plain Greek yogurt or heavy cream
- 1 tablespoon lemon juice
- 1/2 teaspoon smoked paprika
- Fresh parsley for garnish (optional)
Instructions
- Season the salmon fillets with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes until crispy. Flip and cook for another 2-3 minutes until done. Remove from heat and set aside.
- In a blender, combine roasted red peppers, garlic, Greek yogurt or cream, lemon juice, and smoked paprika. Blend until smooth.
- Pour the sauce into a small saucepan and heat over low heat until warmed through.
- Serve salmon fillets topped with roasted red pepper sauce and garnish with fresh parsley if desired.
