Description

Crispy Panko Baked Cod is a healthy, easy-to-make dish featuring tender cod fillets coated in a crunchy, golden panko breadcrumb crust and baked to perfection.

Ingredients

Units Scale
  • 4 cod fillets (about 6 oz each)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or melted butter
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Pat cod fillets dry with paper towels and season with salt and pepper.
  3. Set up a breading station with three shallow bowls: flour in the first, beaten eggs mixed with Dijon mustard in the second, and panko breadcrumbs combined with garlic powder, paprika, and olive oil in the third.
  4. Dredge each fillet in flour, then dip into the egg mixture, and finally coat with the panko mixture, pressing gently to adhere.
  5. Place coated fillets on the prepared baking sheet.
  6. Bake for 15–20 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  7. Serve immediately with lemon wedges.

Notes

  • Use fresh or thawed cod for best results.
  • Adding olive oil to panko helps achieve a golden, crispy crust.
  • This recipe works well with other white fish like haddock or pollock.
