- 1 cup all-purpose flour
- 1/2 cup cornmeal (for extra crunch)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 1 egg, beaten
- 1 cup panko breadcrumbs (for extra crispiness)
- Vegetable oil, for frying
For the Sandwich:
- 4 brioche or sandwich buns
- 1/2 cup tartar sauce (store-bought or homemade, see notes)
- 1 cup shredded lettuce (or leafy greens)
- 1/2 cup sliced pickles
- 1 medium tomato, sliced
- 4 slices American or cheddar cheese (optional)
Instructions
Step 1: Prep the Fish
- Pat the cod fillets dry with paper towels.
- Place them in a shallow dish with buttermilk and let soak for 15-20 minutes. This helps keep the fish tender and adds flavor.
Step 2: Prepare the Breading Station
- In a shallow dish, whisk together flour, cornmeal, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.
- In another bowl, beat the egg.
- In a third dish, add panko breadcrumbs.
Step 3: Bread the Fish
- Remove each cod fillet from the buttermilk, letting excess drip off.
- Dredge in the flour mixture, coating well.
- Dip into the beaten egg, then press into the panko breadcrumbs, ensuring an even coating.
Step 4: Fry the Fish
- Heat about 2 inches of oil in a deep skillet or fryer to 350°F (175°C).
- Fry each fillet for 3-4 minutes per side, or until golden brown and crispy. The internal temperature should reach 145°F (63°C).
- Transfer to a paper towel-lined plate to drain excess oil.
Step 5: Assemble the Sandwich
- Toast the buns in a dry skillet or under the broiler for extra flavor.
- Spread tartar sauce on the bottom bun.
- Layer with lettuce, tomato slices, and pickles.
- Place the crispy cod fillet on top and add a slice of cheese (if using).
- Top with the other half of the bun and enjoy!
Notes
- Make it spicy: Add hot sauce to the tartar sauce or sprinkle extra cayenne into the flour mixture.
- Oven-Baked Version: Bake at 425°F (220°C) for 15-18 minutes, flipping halfway.
- Air Fryer Version: Spray with oil and air fry at 400°F (200°C) for 10-12 minutes, flipping halfway.
- Homemade Tartar Sauce: Mix ½ cup mayo, 2 tablespoons chopped pickles, 1 teaspoon lemon juice, and 1 teaspoon Dijon mustard.
