Ingredients
Scale
For the Crispy Battered Cod:
- 4 cod fillets (or any white fish like haddock or pollock)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cold club soda (or cold beer for beer-battered cod)
- Vegetable oil, for frying
For the Onion Rings:
- 1 large onion, sliced into rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup cold club soda (or beer)
- Vegetable oil, for frying
For Serving:
- Tartar sauce
- Lemon wedges
- Malt vinegar
- Ketchup or spicy mayo
Instructions
Step 1: Prepare the Batter
- In a large bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper.
- Gradually whisk in the cold club soda or beer until smooth. Refrigerate the batter while you prepare the fish and onions.
Step 2: Prep the Oil
- Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Step 3: Fry the Onion Rings
- Dip each onion ring into the batter, letting excess drip off, then carefully lower into the hot oil.
- Fry in batches for 2-3 minutes per side, or until golden brown. Remove and drain on a paper towel-lined plate.
Step 4: Fry the Cod
- Pat the cod fillets dry with a paper towel. Lightly coat them in a dusting of flour (this helps the batter stick).
- Dip each fillet into the batter, letting excess drip off, then carefully place in the hot oil.
- Fry for 4-5 minutes per side, or until the fish is golden brown and crispy.
- Remove and drain on paper towels.
Step 5: Serve & Enjoy!
- Plate the crispy cod and onion rings with lemon wedges and your favorite dipping sauces.
Notes
- Extra Crispy? Double fry the onion rings—fry for 1 minute, drain, and fry again for 2 minutes.
- Beer-Battered Option: Swap club soda for beer for extra flavor and crispiness.
- Best Fish Choices: Cod, haddock, pollock, or halibut work well in this batter.
- Reheating: Reheat in an air fryer at 375°F for 3-4 minutes to keep it crispy.
